Chef masterclass in Kuldīga Technology and Tourism Technical School

sefpavars-zanis-raivo-behmanis-demonstre-steika-servesanu.jpgTo raise young professionals' awareness of the products that can be obtained from Latvia's natural meadows, this year the Latvian Fund for Nature, together with the Young Chefs Movement association, is organising masterclasses for future chefs at several Latvian vocational education institutions. The first masterclass was held on March 12 at the Kuldīga Technology and Tourism Technical School for 15 future chefs. It was led by experienced chefs from Kuldīga restaurants - Žanis Raivo Behmanis from KOPA restaurant and Kristaps Lieldaudzietis from Goldingen Room restaurant.

At the beginning of the masterclass, young people learned about the importance of Latvia's natural meadows and products produced in the meadows, and then tested their knowledge in an attractive competition. The practical part focused on how beef and bones can be used in different dishes. The young chefs prepared beef tartare, steak, beef bone marrow and beef bone broth sauce under the guidance of the chefs.
