Chef masterclasses with grassland products in Ogre Technical College
14.05.2024Nature offers products, ideas and exciting possibilities - don't be afraid to experiment! This call was repeated several times during yesterday's seminar and masterclass for Ogre Technical College students on using natural meadow products in cooking. The workshop was organised by the Latvian Fund for Nature together with the Young Chefs Movement association.
The day started with an educational seminar by the Latvian Fund for Nature for a wide audience of students and teachers about Latvia's natural meadows and their products, ending with a short sprint competition and prizes. Afterwards, the Young Chefs Movement gave a presentation about themselves, highlighting in particular their participation in various festivals and other events, and inviting aspiring chefs to join in and participate.
The practical part was followed by a masterclass for 24 aspiring chefs by experienced chefs Kristaps Sīlis from John restaurant and Roberts Paulāns from Barents restaurant. The young people had the opportunity to cook their own dishes using beef and lamb from natural meadows, as well as sheep's milk and its products. Pēteris Langrāts from the farm "Siliņi", who regularly supplies restaurants with plants both from nature and his own cultivation, told and showed how to use a wide variety of plants to garnish and decorate dishes.
